One of the most delicious and beautiful cakes I have ever made. Very popular in a heart shape for Valentine’s Day. When I was creating this recipe I have included everything delectable I could imagine. There is a thin crunchy crust made with sweet figs and almonds. It is then covered with delightful whipped strawberry mousse layered with sweet strawberry jelly and topped with some fresh strawberries and feather-light cream. There are lots and lots of strawberries!
This raw vegan Strawberry & Cream Cheesecake is made from raw fresh and (where possible) organic ingredients. Thanks to this, all the vitamins and nutrients are retained so you can enjoy this much healthier cake without fear of empty calories settling in your body. No dairy, no eggs, no gluten or artificial flavours and chemicals! I am also not a fan of white sugar, so I use much healthier alternatives such as coconut syrup, maple syrup or coconut sugar, which – unlike white sugar – have more vitamins, lower glycemic index and richer flavours. Even the vanilla extract used in this recipe is free of artificial chemicals as it is lovingly homemade.
