Raw vegan Mango and Passion Fruit Cheesecake. When the time of year is right and there are a lot of different fresh fruit in the shops I can create this scrumptious sweet dessert. Two whole mangoes and numerous fresh passion fruits go into its creation. First I make a delicious nutty spicy crust, then I layer pieces of fresh mangoes on top and cover them with a thick layer of very light passion fruit and mango mousse. To accompany its subtle sour notes, at the end I add the top layer of silky sweet cream.

Raw vegan Mango and Passion Fruit Cheesecake. When the time of year is right and there are a lot of different fresh fruit in the shops I can create this scrumptious sweet dessert. Two whole mangoes and numerous fresh passion fruits go into its creation. First I make a delicious nutty spicy crust, then I layer pieces of fresh mangoes on top and cover them with a thick layer of very light passion fruit and mango mousse. This lovely raw Mango and Passion Fruit Cheesecake is made from fresh and (where possible) organic ingredients. Thanks to this, all the vitamins and nutrients are retained so you can enjoy this much healthier alternative without fear of empty calories settling in your body. No dairy, no eggs, no gluten or artificial flavours and chemicals! I am also not a fan of white sugar, so I use much healthier alternatives such as coconut syrup, maple syrup or coconut sugar, which – unlike white sugar – have more vitamins, lower glycemic index and richer flavours. Even the vanilla extract used in this recipe is free of artificial chemicals as it is lovingly homemade.
