An absolutely delicious almond sponge cake, spiced with a little cardamom and homemade vanilla essence, is baked without any wheat flour or dairy. It is served with a raw vegan coconut sugar glaze that adds a very distinct caramel flavour, and a spoon or two of raw vegan strawberry chia coulis on the side. This dessert is so light you wouldn’t even notice how you’ve already eaten half. My sister-in-law absolutely loves this cake and requests it every time I ask her what to bring when we come over.
